The Sag Harbor Oyster Club
Clean Water. Restored Salmon. Living Oyster Reefs.
For more than fifteen years, The SHO Club has worked on the water—raising and releasing over 35,000 oysters in Sag Harbor and building projects that prove one truth: when we keep the water safe, the water protects us and our homes.
Now our mission expands beyond the bay. We’re rebuilding historic oyster reefs, restoring a wilderness riverine watershed in Nova Scotia. This is inspiring communities to replace chemical fed lawns with regenerative practices for food-producing landscapes.
Each initiative shares one goal—cleaner water and carbon balance from the harbor to the headwaters. They scale well in siloed efforts, and complement each other perfectly. Instead of 'painting' landscapes & shorelines with products, we quietly get behind the natural order of things. This thinking saves money, insures that our clean water stays that way, and it improves the view.

Our Three Active Initiatives
1. Oyster Reef Restoration — Sag Harbor, NY
Rebuilding natural reefs to filter pollution, prevent harmful algal blooms, and protect our harbor’s ecology.
2. Wilderness River Salmon Revival — Nova Scotia
Raising the river’s pH through natural mineral dosing and shell recycling to welcome Atlantic salmon back home.
3. Food-Lawning & Bayscaping — Northeast U.S.
Turning lawns into both gardens & food forests, which reduce harmful chemical loads that get to the tidal reach.

Why This Works
- Oysters: Each adult filters 40 gallons of water per day, and they're broadcast spawners into the tidewaters.
- Lime + Shell Buffering: Proven to raise pH which restores spawning success of wild, native Trout & Salmon.
- Food Forests: Rebuild soil, reduce harmful inputs, lower costs & maintenance...and any harvest is a bonus.
